- 2 cans (14 oz) chickpeas
- 2 tablespoons balsamic vinegar
- 2 tablespoons maple or allulose syrup
- 1 1/2 teaspoon low-sodium soy sauce
- 1 teaspoon finely chopped fresh thyme, oregano, or rosemary
- 1/2 teaspoon garlic
- 1/2 teaspoon smoked paprika,
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- Pepper to taste
- Preheat your oven to 400° F (200º C) and line a baking sheet with parchment paper.
- Add the ingredients to the baking sheet and toss throughly.
- Bake for 20-25 minutes and toss the chickpeas once or twice until the sauce is almost absorbed.
- Remove the chickpeas from the oven while they are still moist. (These are meant to be tender but not crunchy.)

- Make the chickpea bites according to the recipe instructions.
- Prepare the hummus (detailed recipe coming soon) by blending 1 can of chickpeas, 2-3 cloves of garlic, 1/4 cup of tahini, 1/4 cup of olive oil, 2-3 tablespoons of lemon juice, and salt to taste in a food processor until smooth.
